I'm still fairly new to this fandom, so I'm sorry if this is apparent but I just haven't seen it. In the comics is it shown that Gladstone has any kind of hobbies or pastimes he enjoys other than...Well, going after Daisy, and just being lucky? For that matter, any kind of likes or preferences Gladstone has have been hard to find for me.
Is being annoying a hobby? A Gyro Gearloose story showed Gladstone to be a member of a club for lucky people, The Horseshoe Kids. He also plays a lot of lotteries and buys a lot of raffle tickets, so in a way, that could be considered a hobby.

He has no other hobby because he doesn't want to keep himsel busy. He's a physical embodiment of laziness. He thinks bothering to wish for a million dollar is tiring work.
Maybe poems? In The Not-so-Ancient Mariner his fellow club members at the Beard-a-Go-Go bought him a cruise for reciting sea poems. And in the love letter story in WDC 111 we learn that he's been writing love poems in letters to Daisy.

Right! I had forgotten that Barks, tired of having such a restricted character for Gladstone, severely limiting what he could do with him, gave him the added colour, of being a beatnik poet!
In two stories Gladstone has been shown to (secretly) enjoy gardening. This started in Michael T. Gilbert's fine story "Party of None!" (D 2002-076). Having discovered that everyone resents his luck, Gladstone asks Gyro to neutralize his luck on his birthday. Grandma Duck's present to him is a tree to plant, and he discovers to his surprise that he finds it gratifying to care for it and watch it grow. He continues to garden in secret after his luck is restored, but he hides that from folks so as not to admit to engaging in "work". Lars Jensen wrote a follow-up story, "The Secret Gardener" (D 2010-053), which (as you might guess from the title!) apparently shows Gladstone continuing to garden in secret. I only know about this story because Inducks references it in relation to "Party of None!"
Note that I don't say Gladstone is "established" to be a gardener! I've accepted this into my headcanon, because I like "Party of None!" a lot, but everyone is free to accept or reject this characterization at will.
In it, Gladstone is an avid collector of superhero comics, the hero of which was called "Eisenfresser" (iron eater) in Germany and "Skvatmand" (twitman) in Denmark.
I also remember some other old Egmont comics with Gladstone as a member of an association that translates to club of idlers/loafers.

What do you mean "you don't know if this one is canon"? Disney has no official position on what stories are "canon". Don Rosa is the only official source with a specific "canon" which only includes Barks and his own works. Beyond that, fans simply make up their own headcanons, with no absolute answer. Personally, I try to accept every story as canon.

Gladstone do appear collect lucky amulets - horseshoes, rabbit paws etc (in one Barks story - whcih I'm sorry to be forgetting the title) Donald did wanted to buy Gladstone some amulets as a fift, and few of Italian stories actually stories actually shown him pray (?) to greek goddes of luck Themis/Fortunne (which I still standby makes Gladstone only openly religious character and these comics) which I find interestnig.
There was one more... Like Scrooge needed to spent some money over a week and Doald took him on a road trip and help him spend it (the punch-line was that Scrooge spent most of his momeey but it came back from what I recall)
Anyway, there was a part where Donald is buying gifts for the family and stops at some amulet-stend and say he will buy some for Gladstone.
