"Peking" is obviously supposed to reference the famous recipe for Peking duck, named after the old Western name for Beijing.
I suppose "Peking" is a reference of white domestic duck? This species was originally bred in China. (Speaking of which, White Water Duck is a recipe as well...)

Peking duck, or Beijing duck, is a Chinese duck dish. The white domestic duck is called "pekin". Though Peking duck is generally made using pekin duck.
